Winemaking: Organic Diolinoir, Gamay and Pinot Noir grapes from a single plot were harvested by hand. Macerated for 25 days, fermentation with indigenous yeast. Aged in old oak barrels. Bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine with a medium body. All about delicate but concentrated dark fruits, pristine minerals and a cooling herbal edge which feels very Alpine. The grapes are grown 800m above sea which results in an ethereal wine that will keep your mind engrossed for hours.
Notes on the Winemaker: Originally from Dijon, Burgundy-trained winemaker Lucas Madonia has brought a purist, low-intervention philosophy to the steep, terraced alpine slopes of Switzerland's Valais region. Working organically on high-altitude parcels around Ayent that are too steep for mechanisation, Lucas manages his vines entirely by hand. In the cellar, he employs a strict zero-additive approach, crafting sulphur-free, single plot cuvées. His process features manual de-stemming via sieves, patient macerations for reds, aging in old Burgundian barrels, and gravity bottling. The resulting wines beautifully bridge his French heritage with distinct alpine terroir.
