Winemaking: Organic Dolcetto grapes were hand harvested and fermented in cement tank with indigenous yeast with carbonic maceration techniques. Bottled with no filtration, fining or added sulphur.
This Wine: Produced with the classic Beaujolais winemaking technique, this is a natural red wine with a light to medium body. Dark fruits with an earthy edge. Great by itself or with white meat dishes. A big step up from your classic Dolcetto from Piedmont
Notes on the Winemaker: Francesco Pozzobon hails from the Veneto region but now makes natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. he was inspired by the methods of Japanese farmer and philosopher Masunobu Fukuoka and aims to have as little impact on the natural ecosystem as possible. We visited in 2022 to try his wines in barrel which are getting better with every vintage. He previously lived in Highbury before heading back to Italy to start his winemaking project.
