Winemaking: An organic field blend grapes were harvested by hand. Fermentation with indigenous yeast. Aged for 30 months in old barrels. No fining, filtration or added sulphur sulphur.
This Wine: Natural red wine with a medium body. This is an iconic cuvée from a legendary winemaker in the Loire that combines every red grape variety he grows (more than 15!). As you might expect, this is complex with a spectrum to fresh to developed and dried fruits, both red and black. Subtle spice and dried flowers make this a slow burner which should be decanted and enjoyed over a few hours.
Notes on the Winemaker: Etienne Courtois is taking over the running of Les Cailloux du Paradis winery from his father Claude. The family produce natural wines near the village of Cheverny in the Loire Valley and the focus is very much on indigenous and rare grape varieties, some of which are very unique to this area. No synthetic chemicals are used in the vineyard. Extended barrel ageing is preferred in the cellar which usually results in precise and powerful wines.
