Winemaking: Organic Gamay grapes were harvested by hand. Fermentation in whole bunches with indigenous yeast in stainless steel tanks. Aged for 10 months in old oak barrels. No filtration, fining or added sulphur.
This Wine: Light but intense and complex Beaujolais that has developed very well with a couple of yers in the cellar. The name comes from the difficult weather conditions that the winemaker faced in 2019.
Notes on the Winemaker: Nicolas Pavie is located in the village of Theize in the south of Beaujolais. His wines are precise yet full of life and character. He works 2 hectares of organic vines, uses a whole bunch infusion method (not the tradional carbonic maceration style of Beaujolais) and never uses sulphur.
