Winemaking: Organic Chenin Blanc and Pineau d'Aunis grapes were harvested by hand. Direct press before fermentation with indigenous yeast. Aged in old barrels. No filtration, fining or added sulphur. 

This Wine: Natural white wine made with both red and white grapes. A unique use of the Pineau d'Aunis grape that still displays the variety's signature pepper note and herbal character alongside all the classic hallmarks of Chenin Blanc. A unique wine!

Notes on the Winemaker: Côme Isambert teaches at winemaking school near Saumur in the Loire valley but also produces his own wine in very small quantities. He enjoys experimenting with different grape varieties, colours and even different fruits and always creates something unique and sophisticated.
