Winemaking: Organic Gamay grapes were sourced from another grower. Fermentation in whole bunches along with some direct press juice. Aged in old barrel for 9 months. No filtration, fining or added sulphur.
This Wine: Natural red wine made with Gamay grapes from the Burgundian village of Fixin. This is light to medium body with bright fruit and delicate floral notes. Wonderfully balanced.
Notes on the Winemaker: Sébastien Châtillon is a natural winemaker in the southern French region of the Gard. He works 10 hectare of vines but also purchase grapes from other regions which allows him to experiment with a variety of winemaking styles. He previously worked as a sommelier in Paris and studied at Domaine Mosse in the Loire before embarking on his own winemaking journey.
