Winemaking: Organic Gamay grapes were harvested by hand. De-stemmed and macerated for 3 weeks. Fermentation with indigenous yeast. Aged in old barrels. Bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine with a medium body. Light in alcohol but deep and complex with note of black fruit, tomato leaf, dark minerals and a hint of smoked meat. Wild but balanced. Best served with food.
Notes on the Winemaker: Rooted in Aulhat-Flat within France's volcanic Auvergne region, L'Eau qui Dort is the collaborative project of Lisa Le Postec and Paul Aublet-Cuvelier. While they also have their individual endeavours going on, L'Eau qui Dort serves as the negotiant venture where organic fruit is sourced from trusted grower-friends across Auvergne, the south of France, and even Italy to produce expressive, unpretentious wines. Working outside conventional bounds, they avoid work without use of sulphur, fining, filtration, and any other commercial inputs. Their cellar work relies heavily on gentle whole-bunch infusions, old neutral wood, and playful, cross-regional blending of grape varieties. The resulting bottles are fun, refreshing, and anchored in a spirit of experimentation and drinkability.
