Winemaking: Organic Gamay grapes were hand harvested and cold macerated for 4 hours. Fermented with indigenous yeast in fibreglass tanks for 3 weeks and aged on the lees in tank until bottling. No filtration or fining and just a small amount of sulphur on bottling.
Notes on the Winemaker: Natural winemaker Rémi Sédès is a Gamay specialist near Nantes in the Loire valley where he moved to from his home in the Jura. He makes wines with character and elegance.
