Winemaking: Two of the varieties were purchased and the rest came from Francois' own plots in Mailly-Le-Chateau. While bunch co-fermentation with indigenous yeast in a mix of steel and amphora vessels. Bottled with no fining, filtration or added sulphur.
This Wine: Natural red wine which is light to medium bodied and has great complexity. Fresh fruit flavours with some earthy notes. Potentially the only winemaker bringing these grape varieties together! None of this wine was made in 2021 dues to bad weather so snap it up whilst you can.
Notes on the Winemaker: François Écot works out of his grandfather's old house in the small town of Mailly-Le-Chateau in northern Burgundy (near Chablis). He has lived a varied life which included a stint as a Jazz pianist and running his own wine import company in the United States. Now he focusses on making wine from his own 2 hectares near his house or from grapes purchased from friends in Burgundy, Beaujolais and even Catalunya. We paid him a visit in 2022 to see his vines and hear how his latest cuvées were shaping up. A loveable character who makes unique and special wines.
