Winemaking: Organic Gamay and Syrah grapes from Pauline's own vines were hand harvested. Whole bunches of the Syrah were infused into the pressed Gamay and then some white juice was added. Fermentation with indigenous yeast. Aged in tank fin a combination of old barrels and fibreglass tanks.  Bottled with no fining, filtration or added sulphur.

This Wine: Natural red wine with a medium body. Once again Pauline manages to create a unique and intriguing wine that expresses both a delicate nature as well as a deep and concentrated side. There is a special quality to the fruit on display here with tropical aromatics complimenting blueberries and violets. Never had anything quite like it! Wild but balanced. 

Notes on the Winemaker: Paulette Mazinou produces incredible natural wines in very small quantities in the Ardèche village of Quintenas. She previously worked with La Ferme Des Sept Lunes and Daniel Sage before making her first vintage and now the wines have become highly sought-after for their purity and unique character.
