Winemaking: Organic Glera grapes were harvested by hand. Short period of maceration before fermentation with indigenous yeast. No fining, filtration or added sulphur.

This Wine: A litre of natural wine made from the grape usually reserved for Prosecco production but this is a still white wine with a touch of skin contact that brings texture and complexity. Orchard fruits, honey, orange and floral aromas come to together to produce a wonderfully expressive and unique wine. 

Notes on the Winemaker: At the turn of the century, Ernesto Cattel began acquiring forgotten parcels of vines that had been deemed useless to the mass production of Prosecco in this part of Veneto. He started producing wines at the other end of the spectrum that honoured ancient traditions of the region, meticulously made and giving a true reflection of terroir. Since his sad passing in 2018, Alex della Vecchia and Martina Celi have taken on the estate. They previously worked with Ernesto so it's in good hands and the foundations he built are being respected and built on.
