Winemaking: Organic Grapello grapes were harvested by hand. Macerated for 6 days and fermented with indigenous yeast. Must from the grapes was then used to kickstart a second fermentation and the wine was bottled at that moment. No filtration, fining or added sulphur.

This Wine: Natural sparkling red wine made in the Lambrusco style. Slightly lighter and brighter than Claudio's usual style with more of a focus on fresh fruit but still with a touch of earthiness. Great as an aperitif but can also be enjoyed with pizza. 

Notes on the Winemaker: Claudio Plessi has committed the majority of his life to promoting and improving sustainable agricultural practices in his home region of Modena in Emila-Romagna. He has farmed various fruits organically for nearly 40 years and dedicated a lot of time and effort to save and promote rare local grape varieties that were close to extinction. His single varietal wines achieve a wonderful balance of rusticity and precision. Available in the UK in 2024 for the first time.
