Winemaking: Organic Grenache grapes from the Mataburro vineyards were combined with Mauzac grapes from 2P in a collaboration. Fermentation with indigenous yeast in stainless steel. The wine was bottled before fermentation was complete in order to create fizz in the bottle (ancestral winemaking technique - Pet Nat). No fining, filtration or added sulphur
This Wine: A sparkling wine made with both red and white grapes, the ultra rare Pet Nat collaboration between Mataburro and 2P. Candied red fruit with a lemony zing. Saved in the cellar for a couple of years!
Notes on the Winemaker: Mataburro is the project of natural winemakers Laurent Roger and Melissa Ingrand in Rivesaltes which isn't far from Perpignan in the Pyrénées-Orientales region of Southern France. They make wines with amazing freshness considering the warm Mediterranean climate. Mataburro means Donkey Killer which refers to a railway that runs through the vineyard. When it opened in 1910, a train sadly killed 2 donkeys on the first day.
