Winemaking: Organic red grapes from Roussillon were sourced from an organic grower and macerated. Direct press juice from Muscat and Grenache Blanc grapes was blended. Fermentation with indigenous yeast. Bottled before this process was complete in order to trap fizz inside the bottle (Ancestral winemaking technique - Pet Nat). No fining, filtration or added sulphur.

This Wine: Sparkling red Pet Nat from Alice's negotiant project. Bursting primarily with red and black fruit there is also a subtle touch of something tropical and even a mineral element. Would be a great pick me up after a long meal as it's super fresh and still has plenty of complexity.

Notes on the Winemaker: Alice Bouvot has developed a big cult following since starting her domaine in 2004. She produces many cuvées, some with grapes purchased from organic growers (these bottles have the striking gnome labels) and the rest from her own vines. Her wines are unique and invigorating to say the least and should be experienced by any natural wine fan.
