Winemaking: Organic Grillo grapes were hand harvested 2 weeks later than Manlio's white label cuvée. 30% of the stems were kept with the juice after pressing. Fermentation with indigenous yeast for 8 days before only the free run juice was kept. Aged in old barrel for 12 months. Bottled with no filtration, fining or added sulphur.  

This Wine: A very special with from Manlio Manganaro that was made in tiny quantities with only 36 bottles reaching the UK. Richer and more intense that his already amazing white label cuvée. Golden in colour with peach and apricot flavours along with some delicate spice and dried herbs. We kept a bottle back in the cellar for one lucky customer!

Notes on the Winemaker: After running his own natural wine bar in Lombardia, Manlio Manganaro moved back to his native Sicily to hunt out a vineyard in the Marsala region of the island. He is now on his third vintage and oversees just 1 hectare of Grillo vines. He uses manual pressing, no temperature control and doesn't add sulphur at anytime in the winemaking process.
