Winemaking: Organic Grillo grapes were hand harvested 2 weeks later than Manlio's white label cuvée. 30% of the stems were kept with the juice after pressing. Fermentation with indigenous yeast for 8 days before only the free run juice was kept. Aged in old barrel for 12 months. Bottled with no filtration, fining or added sulphur.
This Wine: A very special bottle from Manlio Manganaro that was made in tiny quantities with only 36 bottles reaching the UK. Richer and more intense that his white label cuvée. Dark orange in colour with flavours of candied orange peel, dried apricot, herbs and walnuts with a spicy and smokey finish. complex and best served with food.
Notes on the Winemaker: After running his own natural wine bar in Lombardia, Manlio Manganaro moved back to his native Sicily to hunt out a vineyard in the Marsala region of the island. He oversees just 1 hectare of Grillo vines. With such a small amount of grapes, he can be meticulous in the winemaking process. The press is manual, there is no temperature control and no use of sulphur at anytime in the winemaking process. These are artisan wines in the truest sense of the word.
