Winemaking: Organic Grillo grapes from different plots were hand harvested and underwent direct press before fermentation in stainless steel tanks with indigenous yeast. Aged in tank before bottling with no filtration or fining and just a small amount of added sulphur.  

This Wine: Natural white wine with a hazy, medium body. This givers the texture of the most magnificent Pear juice you have probably ever tasted. Citrus, salt and a hint of green almond remind you exactly where this wine comes from. Great with seafood or by itself.

Notes on the Winemaker: Alessandro Viola's winery is situated in Alcamo, on the northwest corner of Sicily. Inspired by his father's small scale wine project, he began his own winemaking career. He now works 5 hectares of native vines that receive plenty of cooling influences. This results in fresh and fragrant wines that represent this part of the island perfectly.
