Winemaking: Organic Grolleau grapes were harvested by hand. 14 day whole bunch maceration and fermentation with indigenous yeast. Bottled with no fining, filtration or added sulphur.

This Wine: Light and juicy red wine but with a lovely intensity of fresh fruit. Red cherry aromas with some darker fruit notes too followed by a savoury finish. A touch of CO2 and great acidity bring further freshness. 

Notes on the Winemaker: Simon Rouillard trained with some of the biggest names in the Jura (Les Bottes Rouges, Bonard, Domaine de la Tournelle) before returning to his home of Anjou in the Loire valley where he acquired 2 hectares of vines and began planting more. He now produces characterful wines in tiny quantities.
