Winemaking: Organic Festasio grapes were harvested by hand. Fermented with indigenous yeast. Must from the grapes was then used to kickstart a second fermentation and the wine was bottled at that moment. No filtration, fining or added sulphur.
This Wine: Natural sparkling red wine made in the Lambrusco style from a rare grape variety. Medium bodied with a sour cherry focus supported with an earthy, irony underbelly. Delicate complexity. Great with pizza!
Notes on the Winemaker: Claudio Plessi has committed the majority of his life to promoting and improving sustainable agricultural practices in his home region of Modena in Emila-Romagna. He has farmed various fruits organically for nearly 40 years and dedicated a lot of time and effort to save and promote rare local grape varieties that were close to extinction. His single varietal wines achieve a wonderful balance of rusticity and precision. Available in the UK in 2024 for the first time.
