Winemaking: Organic grapes were purchased from neighbouring farmers before undergoing fermentation with indigenous yeast in stainless steel tanks. Traditional (Champagne) method winemaking with re-fermentation inside the bottle. Small amount of sulphur on bottling. Aged for 9 months before release.
This Wine: Bargain, biodynamic Cava! Lemon, green apple and brioche notes. Great for everyday drinking.
Notes on the Winemaker: The Suriol family is known for making Cava but this is the negociant project where organic grapes are purchased from nearby winemakers to make more fun styles of wine that are meant for everyday drinking.
