Winemaking: Organic Malvasia grapes were harvested by hand. Whole bunch fermentation for 10 days with indigenous yeast. Aged in tank for 12 months. No fining, filtration or added sulphur. 

This Wine: Natural skin contact wine, a rarity from winemaker, Eloi. The Malvasia grapes are grown in Cati Ribot's Son Llebre vineyard near Santa Margalida and produce an outstanding expression of the variety with dried Mediterranean herbs, white peach, citrus and a salty, mineral finish. Made in tiny quantities.

Notes on the Winemaker: We first became aware of Eloi around 2016 whilst he was working as a winemaker for 4Kilos in Mallorca. Despite the warm climate of the island, he was producing delicate but complex wines that brimmed with Balearic character. Later he moved into the cellar of Cati Ribot to focus on his own cuvées under the Sistema Vinari name. These wines offer even more personality and always find the perfect balance of wildness and precision.
