Winemaking: Organic Malvasia grapes were harvested by hand. Fermented with indigenous yeast. Must from the grapes was then used to kickstart a second fermentation and the wine was bottled at that moment. No filtration, fining or added sulphur.
This Wine: Natural sparkling wine with an aromatic character and textured body. With a lovely balance of fruit and minerals, this makes for the perfect aperitif.
Notes on the Winemaker: Roberto Maestri makes sparkling wines in the tradition of Emilia-Romagna. Simple but joyful and energetic, these wines made from local grape varieties work great as aperitifs or with food.
