Winemaking: Organic Malvasia grapes were harvested by hand. Short time on the skins and fermented with indigenous yeast. Must from the grapes was then used to kickstart a second fermentation and the wine was bottled at that moment. No filtration or fining Small amount of sulphur on bottling.

This Wine: Dry natural sparkling wine with an aromatic character and textured body. With a lovely balance of fruit, minerals and flowers this is among the best bang for your buck bottles when it comes to fizz. 

Notes on the Winemaker: Camillo Donati produces sparkling wines following the ancient traditions of his region, Emilia-Romagna. Known for their superb value, they show a beautiful purity of fruit and always serve as the perfect aperitif.
