Winemaking: Organic Malvasia de Sitges grapes grown in a single plot were harvested by hand. Fermented and on the skins for 14 days. Bottled with no fining, filtration or added sulphur.
This Wine: The 2019 vintage of Toni's skin contact Malvasia. Maybe impossible to find elsewhere? Even He doesn't keep any of his old wines. Will be interesting to see how this apricot and peach flavours have developed. The name means "under the almond tree" in reference to the vineyard where these grapes were grown.
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada with partner Anna Serra in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
