Winemaking: Organic Malvasia de Sitges grapes grown in a single plot were harvested by hand. Whole bunches were macerated for 2 weeks in stainless steel tanks. Fermented with indigenous yeast. Bottled with no fining, filtration or added sulphur.
This Wine: Arguably the most sought after cuvée from Toni & Anna and for very good reason. Beautifully textured orange wine with a profoundly aromatic character. Tropical on the palate and evokes tinned peaches. Made from a rare clone of the Malvasia grape which is indigenous to the region. The name of the wine means "under the almond tree" in reference to the vineyard where these grapes were grown. The 2024 vintage is lower in alcohol because of intense heat in the Summer months. This had the paradoxical effect of stopping photosynthesis and putting a limit on the ripening of the grape which results in a fresher wine that still has the usual intensity you would expect from this cuvée.
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada with partner Anna Serra in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
