Winemaking: Organic Melon de Bourgogne grapes were harvested by hand. Fermentation in stainless steel and rested in tank for 5 months. No fining or filtration and just a small amount of sulphur added at bottling.

This Wine:  Organic white wine with a medium body and textured character. With restrained fruit notes, this is more about mineral and savoury notes. Interesting to experience the grape originally from Burgundy but scarcely grown there today. 

Notes on the Winemaker: Domaine de la Cadette was established in the late 80s and just after the turn of the Millennium, it achieved organic certification. La Soeur Cadette is the side project of the domaine which combines organic grapes from nearby growers with those from its own vines.
