Winemaking: Organic Merlot grapes from a single plot grown on sandy soils were hand harvested. Fermented with indigenous yeast in stainless steel tanks. No filtration, fining or added sulphur.
This Wine: Full bodied red wine with soft tannins. No flavours of oak, instead juicy red and black fruit is the focus here. Round but with fresh and lively acidity. Best paired with a hearty dish. A warming wine for the cooler months.
Notes on the Winemaker: Ramón Saavedra makes natural wine in the small village of Graena on the northern side of the Sierra Nevada in southern Spain. Despite the desert-like climate here, he retains fresh acidity in his wines due to the high elevation (1000m above sea level) and cool nights. Ramon named his winery Cauzón as it means land of sand in Arabic which reflects the history and soil type of this region. His wines a rustic but very well made and showcase this Andalusian terroir perfectly.
