Winemaking: Organic red grapes were a harvested by hand. Whole bunch, carbonic maceration and fermentation with indigenous yeast in stainless steel. Aged in tank for 6 months. Bottled with no fining or filtration and just a small amount of added sulphur.
This Wine: Natural red wine with a medium body. This is the first ever wine from the Beulah Violetta project and what a great way to kick off. A vibrant wine with body but freshness and a nice complexity of dark fruit, herbs and spice. Easy going, everyday drinking with or without food.
Notes on the Winemaker: Stesso Stesso is the winemaking project of Australian couple James Hird and Annie Conley. Hird, an award-winning sommelier and co-founder of Sydney’s Rootstock natural wine festival, and Conley, a food and travel writer, relocated to Umbria to purchase Beulah Violetta, an 150-year-old estate near Todi. Embracing regenerative and certified-biodynamic farming, they manage ten hectares of vines, olive groves, and wheat fields, crafting low-intervention natural wines rooted in low-yield polyculture and minimal intervention.
