Winemaking: Organic Mondeuse grapes were purchases from a friend and underwent a 3 week maceration. Fermentation with indigenous yeast in stainless steel. Aged in old oak barrels. No filtration, fining or added sulphur.
This Wine: Still red wine despite the crown cap. Light to medium body with delicate cherry flavours. An age worthy wine and only 2 barrels were produced. Saved one bottle in the cellar!
Notes on the Winemaker: Caroline Ledédenté settled in the Bugey region after working as a sommelier in Paris and studying winemaking in the Jura. She makes wine in very small quantities but they all showcase such great character and a real purity of fruit.
