Winemaking: Organic Muscat grapes were hand harvested and crushed before a 3 day maceration period. The fermentation with indigenous yeast continued in concrete tanks. The wine was then aged in old, neutral oak for 10 months before being bottled with no filtration, fining or added sulphur.
This Wine: Aromatic orange wine with delicate notes of stone fruit and pink grapefruit. Amazingly well balanced. One of the wines we most look forward to receiving each vintage.
Notes on the Winemaker: Francesco Pozzobon hails from the Veneto region but now makes natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. he was inspired by the methods of Japanese farmer and philosopher Masunobu Fukuoka and aims to have as little impact on the natural ecosystem as possible. We visited in 2022 to try his wines in barrel which are getting better with every vintage. He previously lived in Highbury before heading back to Italy to start his winemaking project.
