Winemaking: Biodynamic Nebbiolo grapes grown on clay soils were harvested by hand and fermented on the skins with indigenous yeast for 3 weeks in concrete tanks. Aged here for 11 months. Bottled with no fining, filtration or added sulphur.
This Wine: Natural red wine with medium body. Delicate floral aromas with a great intensity of red fruit flavours. Approachable Nebbiolo that works with or without food. Best drunk within 2 hours of opening.
Notes on the Winemaker: Diedre O'Brien & Maurizio Caffer previously lived in London before setting up a biodynamic farm in the Monferrato region of Piemonte, north west Italy where they grow indigenous grapes including the very rare Slarina variety.
