Vegan friendly wine
Winemaking: Organically (uncertified) grown grapes (red and white varieties) from different plots on the north side of Mount Etna were hand harvested. Some underwent skin contact whilst others were whole bunch pressed. Spontaneous fermentation with indigenous yeast in stainless steel tanks and then aged on the lees for 5 months. Bottled with no fining or filtration and just a small amount of sulphur.
This Wine: Still wine made from a blend of red and white juice that has a juicy but complex character. All fresh fruit flavours of strawberry, cherry, blackcurrant and cranberry and complimented with a floral touch and hint of herb.
Notes on the Winemaker: Eric and Anna met in Tuscany before embarking on winemaking in Sicily. Eric is the managing director of Caves de Pyrene, one of the biggest natural wine importers in the UK.
