Winemaking: Organic Palomino grapes from the plot known as Campeonisimo were harvested by hand. Direct press before fermentation with indigenous yeast. Bottled before this process was finished in order to trap fizz inside bottle. Aged in bottle on the lees (sur lattes) for 72 months before disgorgement. Bottled with no filtration, fining or added sulphur.
This Wine: Natural sparkling wine made in the Pet Nat (Ancestral) style but with much more complexity and finesse than you might expect. This is savoury with minerals being the main focus alongside toasted brown rice, lemon and orange flavours. Pure with a very long finish. A unique wine that works with or without food.
Notes on the Winemaker: Fernando Angulo is a natural winemaker in the famous sherry-making town of Sanlucar de Barrameda in the the province of Cadiz. He does things a little differently to the majority of his neighbours in order to produce some of the most unique and special wines we have ever tried. He looks to make oxidative wines but uses nothing artificial to encourage the growth of flor. When it doesn't happen, he produces ancestral method sparkling wines instead. No additions ever.
