Winemaking: Organic Macabeo and Parellada grapes were harvested by hand and crushed Fermentation with indigenous yeast in stainless steel tanks. Canned before fermentation was complete in order to create fizz in the can (Ancestral method / Pet Nat). No fining, filtration or added sulphur.
This Wine: We were sceptical ourselves at first but after tasting, we were fully on board. Natural wine in a can! Fresh and spritzy Pet Nat with citrus and mineral flavours. Without a doubt the best canned wine we have ever tried!
Notes on the Winemaker: Can Vi is a natural-wine-in-can project from Cristina Vaque, partner of Catalan winemaker Jordi Llorens. She uses his wine made from earlier harvests in order to produce a fresher and lighter style more suitable for easy drinking. Everything is made without filtration, fining or added sulphur. The can revolution might just be here!
