Winemaking: Organic Pineau d'Aunis grapes were purchased from the organic Domaine du Cambalu. Macerated for 6 days before fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, filtration or added sulphur.

This Wine: Natural red wine with a light body. Easy going but still displays the classic varietal characteristics such as white pepper, violet, raspberry and red currant. Just 10.5% alcohol, this is great from the fridge on a warm summer's day!

Notes on the Winemaker: Laurent Saillard worked in the restaurant world before he found his calling in natural wine. He has created quite a buzz for himself in the eastern part of the Loire valley where he works with native grape varieties such as Sauvignon Blanc, Pineau d'Aunis and Gamay.
