Winemaking: Biodynamic grapes grown on granite soils were harvested by hand and then underwent direct press before spontaneous fermentation with indigenous yeast. Aged for 11 months before being bottled with no fining.  A small amount of sulphur was added on bottling.

This Wine: A natural white wine from the esteemed Binner domaine. Full of finesse and precision with a lovely intensity of stone fruit and floral aromas. This is superb value, punching well above its price point. Can work with or without food.

Notes on the Winemaker: For over two and a half centuries, the Binner family have been making wine in the Alsatian village of Ammerschwihr. Christian has been running the winery since 1999 and has helped develop a reputation for elegant and precise wines made with minimum intervention.
