Winemaking: Biodynamic grapes grown on granite soils were harvested by hand and then underwent direct press before spontaneous fermentation with indigenous yeast. Aged for 11 months in concrete tanks before being bottled with no fining. A small amount of sulphur was added on bottling.

This Wine: Natural white wine with a medium body. Not sparkling despite the crown cap. This is rich and opulent but with balancing acidity. Dry but with plenty of tropical fruit on the palate something toasty on the finish. The 2024 vintage of this cuvée shows the wilder side of Christian Binner's wine making skills with a touch of volatile acidity bringing further energy to the wine. Great value!

Notes on the Winemaker: For over two and a half centuries, the Binner family have been making wine in the Alsatian village of Ammerschwihr. Christian has been running the winery since 1999 and has helped develop a reputation for elegant and precise wines made with minimum intervention.
