Winemaking: Organic Pinot Gris grapes were harvested and de-stemmed by hand before. Crushed by foot and macerated for 13 days. Fermentation with indigenous yeast in stainless steel. Aged in a combination of tank and glass demijohn for 12 months. No fining or filtration. Very small amount of sulphur added on bottling.
This Wine: Natural skin contact wine from Sophie Evans first vintage of her own vines. Peachy coloured in the glass with a punch of strawberry fruit and a savoury, saline finish. Highbury Library was part of a project to save old empty wine bottles that were then cleaned and re-used for these wines from Sophie. 405 bottles produced
Notes on the Winemaker: Sophie Evans worked with 2Naturkinder in Germany and made her own wines using some of the grapes from those vineyards but also with biodynamic fruit purchased from other growers in the area. She has now moved back to the UK and has her own vines down in Kent. 2022 was the first vintage from these plots of Pinot Noir, Pinot Gris, Reichensteiner and Bacchus. It's been amazing to watch Sophie's journey so far and we can't wait to see what comes next.
