Winemaking: Organic grapes from chalky soils were harvested and de-stemmed by hand before being crushed by foot. Fermentation with indigenous yeast in stainless steel. Aged for 11 months in a combination of tank and demijohn. Bottled in August 2025 with no fining or filtration and just a touch of sulphur. Aged for 11 further months in bottle before release.
This Wine: Natural white wine with a medium, textured body. Easy drinking and light in alcohol but with concentrated and complex notes of citrus, apple, quince and elderflower. A wine that truly reflects the identity of the English countryside. Just 380 bottles produced
Notes on the Winemaker: Sophie Evans worked with 2Naturkinder in Germany and made her own wines using some of the grapes from those vineyards but also with biodynamic fruit purchased from other growers in the area. She has now moved back to the UK and has her own vines down in Kent. 2022 was the first vintage from these plots of Pinot Noir, Pinot Gris, Reichensteiner and Bacchus. It's been amazing to watch Sophie's journey so far and we can't wait to see what comes next.
