Winemaking: Organic Pinot Gris grapes were harvested by hand. De-stemmed before 5 days of skin contact. Fermentation with indigenous yeast in stainless steel. Aged in tank for 11 months. Bottled with no fining, filtration or added sulphur.
This Wine: Natural wine that pours a beautiful pinky, orange colour in the glass. Full of finesse with delicate notes of pink grapefruit, lemon, minerals and subtle spice. Would be great with white fish or other subtle flavours.
Notes on the Winemaker: Martin Hirsch grew up in Bavaria and lived for many years in Frankfurt before realising that he really belonged in nature among the vines. He studied with Franz Weninger in Austria and Hungary before returning to his homeland and settling in the village of Kitzingen in the Franken region. He farms 2.5 hectares of vines are works closely with local winemakers such as 2Naturkinder under a collective known as New Kitz
