Winemaking: Organic grapes were harvested by hand. Pinot Gris grapes were macerated. Everything fermented in stainless steel tanks with indigenous yeast. No filtration or fining. Small amount of added sulphur on bottling.
This Wine: Haggis is a special wine only made in when conditions are right. An aromatic blend of grapes, it drinks somewhere between and orange and a rosé with more savoury, fruity and spicy notes. Basically a bit of everything going on in this fun but complex wine.
Notes on the Winemaker: Patrick Sullivan and his wife Megan produce wine in the rural region of Gippsland, Victoria. In the UK, he generated a real buzz for himself with the fun and accessible Jumpin' Juice project but in recent years he has been producing more and more serious and complex wines that offer intriguing glimpses of this magical, Australian terroir. He dedicates most of his time in the vineyard to help his fruit reach its highest potential which then allows a more hand off approach in the winery.
