Winemaking: Biodynamic Pinot Meunier grapes were harvested by hand. Fermentation with indigenous yeast in oak barrels. Aged here for 10 months. Bottled for second fermentation and aged on the lees in the bottle for 30 months (Traditional / Champagne winemaking technique). 2.5g/l dosage. No fining, filtration or added sulphur.
This Wine: English sparkling white wine made in the Champagne method. This is rich but bright and full of finesse. Leesy, brioche notes compliment the elegant and vibrant fruit on display here. Green apple and citrus. Only 450 bottles produced.
Notes on the Winemaker: Lucie and Jules have been growing grapes in Ham Street, Kent since 2019. The couple are passionate about wine, biodynamics, sustainability and biodiversity. They released their first vintage in 2022 and in 2024 became biodynamic certification (one of only 6 certified vineyards in the UK). In the winery they are off grid. There are no pumps, no pneumatic presses and they work by gravity. Everything is passed through the basket press and Lucie and Jules taste as they go. They are now producing 15,000 bottles a year. The wines are complex, alive and delicate, never filtered or fined and sulphur is kept to an absolute minimum. One of favourite local producers!
