Vegan friendly wine
Winemaking: All grapes were grown organically in the Black Mountain vineyard. Pinot Meunier from 2018 underwent whole bunch press, fermentation with indigenous yeast and was aged for 18 months in old barrels. Solaris and Siegerrebe grapes from 2021 were crushed before spending 3 weeks on the skins. The wines were blended and Pinot Meunier juice from 2021 was added to kick start the second fermentation in bottle. The wine was not disgorged. No fining, filtration or added sulphur.
This Wine: A rich and round sparkling wine with refreshing acidity. Amazingly intense notes of pink grapefruit alongside lemon and apple. This would best be served with fish r a cheese based dish.
Notes on the Winemaker: Mark and his partner Laura planted the Black Mountain vineyard (just 3 hectares) in 2009 close to the Brecon Beacons in Herefordshire. They grow international varieties as well as hybrids and everything is now certified organic.
