Winemaking: Organic / biodynamic Pinot Meunier grapes were harvested by hand and fermented with indigenous yeast in a combination of old oak (30%) and concrete vats (70%). Aged for 30 months before bottling second fermentation (traditional, Champagne method sparkling wine). Disgorged in September 2025. No dosage, brut nature. Minimal use of sulphur.
This Wine: Impeccable Champagne made from 100% Meunier grapes. This is more on the clean, fruit forward side versus rich and round but still has plenty of weight and texture. Bitter orange, white flowers and subtle red berries. Delicate and precise.
Notes on the Winemaker: The Bourgeois-Diaz family have been winemakers in the Marne department of Champagne for 4 generations and the vineyards have been certified biodynamic since 2007. Jérome Bourgeois and his wife Charlotte currently run the domain and produce precise and immaculate wines.
