Winemaking: Organic Pinot Noir grapes were harvested by hand. Whole bunch maceration for 2 weeks in concrete tank before fermentation with indigenous yeast in old barrels. Aged in old oak barrels for 12 months. No filtration, fining or added sulphur.
This Wine: A one off cuvée from Christian which utilises Pinot Noir grapes from 70 year old vines owned by friends in Puligny and Savigny. He combined with some of his own Pinot Noir from his oldest, steepest plots that are part of the Goutte d'Or vineyard. Deeper and darker than the usual Dandelion style, this offers more structure and as usual, will age very well.
Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
