Winemaking: Biodynamic Pinot Noir grapes were harvested by hand. Direct press before fermentation in in a combination of stainless steel and amphora vessels. Traditional method (Champagne) winemaking. The wine remained inside the bottle on the lees for 10 years before disgorgement. Small amount of sulphur on bottling
This Wine: Natural sparkling wine made in the Champagne style. Full of finesse and elegance, this remains light on its feet yet still powerful and complex. Citrus and stone fruits are complimented by a strong mineral element and Champagne like notes of brioche and cream. A great price for a wine that has been over 10 years in the making. Only 5000 bottles produced.
Notes on the Winemaker: István Bencze is a pioneer of natural winemaking in Hungary. His vineyards are situated on the Szent György hill, in Badacsony near Lake Balaton. He works meticulously in the vineyard, harvesting at multiple times in order the achieve the right balance in the final wine.
