Winemaking: Organic Pinot Noir grapes from a two plots were harvested by hand. 85% of the grapes were de-stemmed whilst 15% remained in whole bunches. Fermented in stainless steel tanks. Aged in old barrels for 12 months. No filtration or fining. Small amount of added sulphur on bottling.
This Wine: Natural red wine with a light to medium body. Vibrant red and black fruit with fresh acidity. Cherry, strawberry and floral notes. Such a delicate, and moreish wine. 2700 bottles produced. Patrick told me the 2021 vintage was so good, he doesn't want to make it again as it feels it can't be beaten.
Notes on the Winemaker: Patrick Sullivan and his wife Megan produce wine in the rural region of Gippsland, Victoria. In the UK, he generated a real buzz for himself with the fun and accessible Jumpin' Juice project but in recent years he has been producing more and more serious and complex wines that offer intriguing glimpses of this magical, Australian terroir. He dedicates most of his time in the vineyard to help his fruit reach its highest potential which then allows a more hand off approach in the winery.
