Winemaking: Organic Pinot Noir grapes were harvested by hand. Whole bunch maceration in concrete tank before fermentation with indigenous yeast in old barrels. Aged in old oak barrels. No filtration, fining or added sulphur.
This Wine: 2023 vintage from the elusive Domaine Dandelion. This comes from 7 plots of vines around Meloisey including 2 at high elevation that go into the Aube cuvée. This brings a more mineral character to this vintage. Very small production and will age exceptionally well.
Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
