Winemaking: Organic Pinot Noir grapes from a single plot of vines grown on volcanic soils at 300m above sea level were harvested by hand. 85% of the grapes were de-stemmed whilst 15% remained in whole bunches. Fermented in stainless steel tanks. Aged in a mixture of old barrels and ceramic vessels for 12 months. No filtration or fining. Small amount of added sulphur on bottling.

This Wine: Natural red wine with a light to medium body. Everything good about Gippsland 2021 is present but dialled up to another level. A greater intensity of fruit is brilliantly balanced with more pronounced herbal notes. Concentrated and full of finesse.

Notes on the Winemaker: Patrick Sullivan and his wife Megan produce wine in the rural region of Gippsland, Victoria. In the UK, he generated a real buzz for himself with the fun and accessible Jumpin' Juice project but in recent years he has been producing more and more serious and complex wines that offer intriguing glimpses of this magical, Australian terroir. He dedicates most of his time in the vineyard to help his fruit reach its highest potential which then allows a more hand off approach in the winery.
