Winemaking: Organic Pinot Noir grapes were sourced from Leicestershire. De-stemmed and then half the grapes were macerated for 4 days whilst the rest for 11 days. Pressed into an old Burgundy barrel where the wine aged under flor for 9 months. No fining, filtration or added sulphur.

This Wine: Natural rosé wine made with Pinot Noir grapes grown by Matt Gregory. After her earlier collaboration with Offbeat, this is Paris' official debut cuvée! Despite containing just 8.5% alcohol, there is a nice concentration of summer berries and citrus fruit before a mineral finish. 

Notes on the Winemaker: Paris Barghchi has been following her deep passion for natural wine for many years now, working all over the UK with some of the country's best winemakers and also further afield helping out the Likes of Bodega La Senda in Northern Spain. In 2023 she made a Pet Nat in collaboration with Offbeat and in 2026 released her first wine under the 'From Paris' label. At the moment she utilises fruit from organic growers but who knows what the future holds...
